Coyotas Paloma

Coyotas are a tradition from Sonora, Mexico — her home state — flat, tender pastries filled with piloncillo, born in Hermosillo and passed down for generations. Dany's version honors that history while adding her own touch, each one shaped and filled by hand before it ever reaches the oven.
